Citri-Fi in fruit preparations

If you are looking for a product to help replace or reduce pectin in your application. Citri-Fi could be the answer. 
Citri-Fi is made from orange pulp and contains native pectin, which contributes to Citri-Fi soluble fiber content. 

Under certain conditions, similar to the ones present in fruit preparation (higher brix and lower pH), the native pectin gets activated to create gelling system. This allows Citri-Fi to be considered for partial or complete pectin replacement.
